Jeff Adamek’s Pizza Buffet
Makes several mini pizzas
pizza dough (2–3 oz. per person)
SUGGESTED INGREDIENTS FOR DIY PIZZAS FOR OUTDOOR GRILLING INCLUDE
smoked mozzarella
herbed mozzarella
fontina
onions, carmelized
crimini mushrooms, sautéed with thyme
tomato sauce
picholine olives
feta cheese
goat cheddar
red peppers, roasted
pepperoni, thinly sliced; loose sausage; or prosciutto (optional)
Set out toppings on a buffet table. Allow guests to assemble mini pizzas with dough and toppings. Grill, ideally on a pizza stone, outside, for 6–7 minutes over hardwood charcoal.
