Lime Mojo Grilled Shrimp

For this citrus-garlic shrimp, prepare the marinade a day in advance and finish shrimp on the grill as guests sip cocktails.

FOR THE MOJO:

6 cloves fresh garlic, diced
1 tsp. Scotch Bonnet pepper, diced
1½ Tbsp. jalapeños, diced
¼ c. cumin, toasted and ground
¼ c. coriander, toasted and ground
1 c. lime juice, fresh squeezed
1 Tbsp. sherry vinegar
1/8 c. fresh cilantro, chopped
1/8 c. fresh Italian parsley, chopped
½ tsp. kosher salt
1 Tbsp. fresh black pepper, ground
1 c. canola oil

FOR THE SHRIMP:

2 lbs. shrimp (16-20 medium)

Peel and de-vein shrimp, leaving the tail shell on. Toss shrimp with ¾ c. of the lime mojo. Marinate for one hour. Grill over high heat and serve drizzled with more mojo. Pass immediately on a platter.
