Grilled Grapefruit and Mint Relish
Young suggests trying this relish over grilled salmon or mahi mahi.
2 large ruby red grapefruit
2 Tbsp. olive oil
1 Tbsp. mint leaves, torn into small pieces
2 Tbsp. red onion, minced
¼ tsp. salt
¼ tsp. cracked pepper
Preheat grill to high heat. Peel grapefruit with a sharp knife, removing white membrane. Slice into ½-inch- to ¾-inch-thick slices. Brush olive oil lightly over surface of grapefruit and place onto fiery hot grill. Cook just until grill marks appear, approximately 30 seconds per side. Cut out tough center of the grapefruit and discard. Dice grapefruit and mix with remaining oil, mint, red onion, salt, and pepper.
