Watermelon Ice

Serves 6

6 c. seedless watermelon, cubed
1 lemon
¾ c. sugar

Cut melon away from rind and cut into ½-inch cubes using utility knife. Place melon in mixing bowl; mash with nylon masher. Mixture will have small pieces of fruit in it. Juice lemon to measure
3 to 4 Tbsp. juice. Add lemon juice and sugar to watermelon; mix well. Divide fruit mixture evenly among three freezer-safe containers; freeze until firm. Remove frozen mixture from containers; shave.
