Mutsu Apple Coleslaw

Serves 8

Klein uses the semi-sweet, somewhat tart Mutsu apples in this sweet and savory salad. “It doesn’t discolor and holds up to the dressing well,” he says. Because it lacks mayonnaise or any dairy products that could spoil, it’s a great buffet item.

½ head red cabbage
½ head green cabbage
3 large carrots
4 Mutsu apples
1 clove garlic
1 tsp. Dijon mustard
salt, a pinch
6 Tbsp. apple cider vinegar
6 Tbsp. olive oil

Shred cabbages, apples, and carrots. Mix together and set aside. In a separate bowl, mash garlic and salt to a paste. Add remaining ingredients and whisk together. Pour over fruit and vegetables; toss.
