Maple-Roasted Pears

Serves 6

Roasted Pears

6 Seckel pears
2 Tbsp. butter
1 c. maple syrup

Ricotta Cream

2 c. buffalo milk
1 c. heavy cream
¼ c. icing sugar

½ c. toasted hazelnuts, coarsely chopped
Amaretti cookies, crushed

Preheat oven to 325 degrees. Halve the pears and scoop out cores with a melon baller. Heat a medium-sized sauté pan, and melt butter. Place the pears in the pan, cut side down, and cook until cut side is golden brown. Pour over maple syrup and bring to a simmer. Move pan to preheated oven and cook pears until tender. Allow pears to cool in the syrup. These can be made the day before serving. Put ricotta, cream, and sugar in a mixing bowl. Use spatula to mix just until combined. Divide ricotta into 6 serving bowls. Warm pears and spoon them over the ricotta. Sprinkle over the hazelnuts and crushed cookies.
