Classic Apple Pie

Serves 8 to 10

Klein, the baker of his family, likes to use a mixture of apples, including sweet, tart, soft, and crisp to add texture and complexity to his pies. His favorite combination includes Ida Reds, Grimes Golden, and Northern Spys.

2 batches All-Butter Dough (see All-Butter Pie Crust recipe)
4 lbs. apples
2 Tbsp. brown sugar
1 Tbsp. cinnamon
4 Tbsp. butter

Peel, core, and slice each apple into 16 wedges. Toss with sugar and cinnamon. While apples macerate, roll out dough and fit to bottom of pie pan. Fill with apples, and dot with butter. Top with second crust, crimp the edges, and cut a few slits in the center. Bake in preheated 400 degree oven for 45 minutes. Bake on a pan to catch drippings.
