Applesauce

Serves 8

“Applesauce is a great, classic, multi-purpose comfort food,” says Klein, who recommends serving it as a side dish to meats or on its own as a simple dessert.

1 small bucket mixed apples
¼ c. water
3 Tbsp. sugar, to taste
1 Tbsp. cider vinegar
½ tsp. ground cinnamon (or nutmeg)

Peel, core, and roughly chop apples. Stir all ingredients together in a saucepan. Bring to a simmer, stirring occasionally. Reduce heat to low and cook, covered, until apples are falling apart (about 15–20 minutes). Mash roughly for a chunky sauce, or run through a food mill for a smooth sauce.
